Description

These golden, crispy rice patties are the perfect way to transform leftover rice into a delicious new meal. Instructions

  1. In a large mixing bowl, combine the leftover rice, chopped onion, grated cheese, beaten egg, parsley, minced garlic, and diced red bell pepper. Mix well.
  2. Add the Greek yogurt, lime juice, salt, black pepper, and smoked paprika to the bowl. Stir until all ingredients are evenly distributed.
  3. Sprinkle the flour over the mixture and gently fold it in. This will help bind the patties.
  4. Using your hands, form the mixture into 8 equal-sized patties, about 1/2 inch thick each.
  5. Heat olive oil in a large non-stick skillet over medium heat.
  6. Once the oil is hot, carefully place 4 patties in the skillet. Cook for 3-4 minutes on each side, or until golden brown and crispy.
  7. Remove the cooked patties and place them on a paper towel-lined plate to absorb excess oil. Repeat with the remaining patties.
